Cardamom Chia Overnight Breakfast Bowl

 
 
 

 

This very simple breakfast, with its tapioca pudding-like texture, will quickly become a favorite mid-week treat. Soaking the chia seeds overnight helps make them more digestible, and will help meld the flavors of the dates and spices. For a special breakfast, top the chia pudding with some fresh fruit and yogurt or whipped cream.

Makes 2 servings

Ingredients

1/3 cup Firefly Kitchens Puréed Probiotics *see note below

2 pitted dates, finely chopped

1/2 cup chia seeds

1/4 teaspoon ground cinnamon

1/4 teaspoon ground cardamom

2 cups almond milk, or non-dairy milk of choice

½ cup roughly chopped nuts (optional topping)

3 tablespoons unsweetened dried coconut (optional topping)

Method

Put the dates, chia seeds, cardamom and cinnamon in a quart-size bowl. Pour the milk over the mixture, stirring gently until mixed. 

Cover and refrigerate overnight. In the morning the chia seeds will have absorbed most of the almond milk and the mixture should have a thick, pudding-like consistency. 

Top chia seed pudding with nuts and coconut, if desired. For a slightly thinner porridge, serve it with additional almond milk.

Chia seeds were a significant part of Aztec and Mayan diets—and with good reason. They are a rich source of omega-3 fatty acids and high in fiber. In fact you only have to eat 2 tablespoons of chia seeds to get 10 grams of daily fiber. Chia seeds are also said to help decrease inflammation, lower cholesterol, and help regulate blood sugar.

Note: You can make your own Puréed Probiotics by blending Classic Kraut in a blender or food processor until it is the consistency of applesauce.
