Curtido Mashed Potatoes

Ingredients
4 lbs of your favorite potatoes
1/4 cup unsalted butter
1 cup milk
1 3/4 cups of Kimchi or Curtido
Method
Boil potatoes in a large pot of salted water for 20 minutes. While potatoes are cooking, purée 1 1/2 cups of Kimchi or Curtido. Drain potatoes in colander. Warm butter and milk in the heated pot. Add potatoes to pot and mix into the butter and milk with a masher. Once potatoes are mashed, add the puréed Kimchi or Curtido. Mix and move to a serving dish. Garnish with remaining Kimchi or Curtido. Add salt and pepper to taste.
