At Firefly we want you to love our living fermented foods, but more than anything we want to show you how easy and delicious it is to add them to everything that you eat! This is where velvetizing comes in…

Texture plays an important role in the foods that we know and love, and we’ve found that when we frappe or velevetize our beloved kraut we can add it to almost anything. So, we’re eating the foods we love — carrot cake, pudding and mac n cheese — but the kraut makes them easier to digest and more nutritious.

We add kraut to things that might surprise you.

Fantastic on a burger, sandwich or crackers. Or make it thinner with brine for a veggie dip.

1 8oz cube cream cheese
1⁄2 cup Firefly Kimchi (or more if desired)
2 T goat cheese (optional)
Splash of kimchi brine if you want it lighter and fluffier
Puree all ingredients until smooth and enjoy!

It packs a powerful zing, and of course, all those probiotics and enzymes.

Add 1⁄4 to1⁄2 cup Classic Kraut to any fruit or green smoothie of your choice. YUM!


Tasty with crackers or bread.

1 cup Emerald City Kraut
1⁄2 cup Kalamata olives
2 cloves garlic
2 T chopped parsley
1 T olive oil
Blend all the above to desired consistency.
