Our Products


All Firefly Kitchens products are created through traditional fermentation methods. Unlike other pickled and preserved products, all of our foods are completely raw and naturally preserved.  Through the process of fermentation we are able to preserve our products without heat or preservatives while creating extremely healthy and vivacious foods to nourish your body and soul!
To preserve the health benefits, natural enzymes, and lactobacilli that make cultured foods so amazing, we encourage you to keep our products refrigerated and to enjoy them raw.

 


INGREDIENTS: Organic Green Cabbage, Organic Green Onions, Organic Garlic, Organic Ginger, Celtic Sea Salt & Korean Red Peppers
Based on the classic Korean style fermented cabbage, Firefly Kimchi is our special version of the spicy and flavor-intense food. The combination of ginger, garlic and spice in our kimchi achieves a well balanced spicy kick without the lingering burn. Unlike the Korean style, we have left out the fish sauce and shrimp paste to maintain our vegan and raw standards.

Enjoy with: Stir fry, rice and beans, wraps, eggs and braised greens.

Yin Yang carrots are a crowd-pleaser. Their sweet gingery flavor and fresh carrot crunch make Yin Yang carrots are one of our best sellers and the winner of the 2011 Good Food Awards. We keep it simple by relying only on the great flavors of locally produced organic carrots and fresh zesty ginger ingredients and find that the originality of the fermented food combo brings a smile to skeptical tasters.

Hint: If traditional sauerkraut or spicy Kimchi flavors are not your thing, Yin Yang carrots are your best bet for a fermented food favorite.

Our classic sauerkraut has a mild flavor with just a hint of tang from the fermentation process.  It is the most traditional fermented food we make and is a favorite of classic sauerkraut enthusiasts.

Ruby Red is our twist on the classic kraut recipe with a depth of flavor and texture that other red cabbage krauts miss. The royal ruby color and hint of natural sweetness from the beets create a mellow and pleasing flavor while the carrots and onions add crunch and zing to the product.

Enjoy with: roast chicken or turkey, mashed potatoes, soup, salad or, as a side to any meal.

Cortido is our Spanish inspired version of sauerkraut, based on a popular fermented cabbage, onion and spice mixture served with many South American meals. The mellow heat from jalapenos and discrete oregano flavor beg for fresh warm tortillas and melted cheese while the freshness of carrots and onions point towards fresh greens and grilled vegetables.

Enjoy with: Grilled mushrooms or chicken, rice and beans, tacos, enchiladas and tortilla soups.

Salsa Viva is a zesty mix of cabbage, spices, peppers and lime juice, and gets its beautiful red hue from fresh beets! Our salsa actually contains no tomatoes, which surprises some, but is an outstanding stand in for the standard varieties and gets rave reviews.

Enjoy with: anything you like salsa on! We like it mixed with avocados for a new and improved guacamole, served on grilled fish and veggies or as a topping for fresh tacos.

Firefly’s Caraway Kraut was born from many requests we received at farmers markets and sampling events. Sauerkraut enthusiasts ensured us that the caraway was a key flavor to the classic sauerkraut taste so we made a flavor just for them. The caraway adds a nice dimension of flavor to our classic sauerkraut and adds a bit of extra tang!

Enjoy with: a Ruben sandwich, grilled sausages or veggies, on mashed potatoes or in a potato salad or coleslaw!

The Process

The main player in fermentation is a strain of good bacteria called lactobacilli.  Lactobacilli are present on the surface of all living things and are especially proliferate on the leaves, roots, veggies and fruits of healthy growing plants.  The process of fermentation begins after the desired part of the plant is washed, chopped, mixed with salt and the desired spices and packed into an airtight container. We ferment all of our foods in stainless steel fermentation tanks originally designed for wine production. In the airtight environment, lactobacilli begin to feed on the starches and sugars in fruits and veggies, breaking them down and creating a by-product called lactic acid. During the first few days, while the lactobacilli begin their breakdown process, salt prevents any other/bad bacteria from growing in the container.
As the lactobacilli get to work, lactic acid quickly creates an acidic environment where other bacteria cannot grow, therefore preserving the food for an extended period of time.  During the fermentation period the flavors continue to develop, probiotic count multiplies and lactic acid content increases.  Most of the foods at Firefly kitchens are allowed to ferment for six weeks. After the fermentation period we remove our products from the fermentation tanks and hand pack it in the individual sized jars we sell to you.  Each jar is filled to the brim with product and topped with brine (the natural liquid excreted from the vegetables during fermentation, which is salty and acidic from the fermentation process) to preserve freshness and flavor.
Firefly’s fermentation process requires no heat and all products are kept raw through the entire process.  This is beneficial for several reasons.  First, raw foods are known to be more nutrient rich and good for your digestion that their cooked counterparts. Second, we use no energy (in the form of heat) in the fermentation process and therefore the foods you get from Firefly Kitchens are good for the environment too!  Third, the “live” ingredients in the raw food are not killed off in a heating or cooking process, which protects the millions of good living bacteria in each bite that have numerous benefits for your body. Our fermented foods will keep well in you refrigerator for a long time because of the natural preservation agents.  If you can make it last this long, we suggest consuming them within 4 months of purchase.
