Firefly Caprese Salad


It is peak tomato season, and a fresh tomato and basil caprese salad can be elevated with a few forkfuls of Firefly’s Classic Kraut! Brilliantly simple and perfectly refreshing, put this beautiful salad on your list ASAP.

Firefly Caprese Salad
3 ripe tomatoes , sliced (we love heirloom or vine ripened the best)
1 cup fresh mozzarella, sliced or chopped
1/3 cup loosely packed fresh basil, chopped
1/4 cup red onion, diced (optional)
1/4 cup Classic Kraut, chopped (Firefly Ruby Red Kraut is a winner, as well!)
extra-virgin olive oil
balsamic vinegar
fresh ground salt and pepper to taste

Layer slices of tomato on a shallow bowl or small platter.
Top with mozzarella, fresh basil, and red onion.
Take the Classic Kraut out of the jar with a clean fork, letting any extra brine drain back into it. Roughly chop the kraut, and sprinkle it on top.
Lightly drizzle the salad with olive oil and balsamic vinegar, and finish with salt and pepper
