Firefly's White Bean Feta Salad

This refreshing salad with spring greens and white beans is easily adaptable to whatever you have on hand. Add your favorite nuts or change up the beans or olives to fit what you’re craving!
We love how the oregano and hint of jalapenos in Firefly Cortido pairs with the flavors of the feta cheese and dijon mustard, but Classic Kraut is also a perfect addition.

White Bean Feta Salad

10 - 12 oz baby leafy greens
½ cup cannellini beans, rinsed and drained
½ cup Classic Kraut or Cortido Kraut
⅓ cup crumbled feta
⅓ cup pitted Kalamata olives, halved
¼ red onion, thinly sliced

Dressing:
2-3 tablespoons fresh lemon juice
2 tablespoons olive oil
1 tablespoon Dijon mustard
1 teaspoon honey
Coarse salt and ground pepper

Combine salad ingredients in medium-sized bowl.
Whisk dressing ingredients together on the side.
Add dressing to salad ingredients and toss lightly.
