Firefly's Celery Salad
It is already the fourth week in our Summer of Salads Series!
This refreshing, crunchy recipe pairs well with most mains. Ruby Red Kraut was our favorite pairing with the balsamic dressing, but Classic Kraut tastes great as well. Try adding garbanzo nuts, or your favorite minced dried fruit for a more robust salad. We topped our version with toasted pine nuts and shaved Parmesan, and loved the result!
Firefly’s Celery Salad
3 cups celery, thinly sliced on the diagonal
1 cup fresh parsley, loosely packed
½ cup Ruby Red Kraut or Classic Kraut, chopped
½ cup golden raisins
2 tablespoons fresh shaved Parmesan (optional)
2 tablespoons extra virgin olive oil
2 tablespoons white balsamic vinegar
Salt and pepper to taste
Combine salad ingredients in medium-sized bowl.
Whisk together oil and balsamic vinegar on the side.
Add dressing to salad ingredients and toss lightly.
