Firefly’s Yin Yang Kale Salad

Summer is finally here!
We’re excited to celebrate the first day of the season with our first Summer of Salads recipe!
Firefly’s Yin Yang Kale Salad is a bright addition to that backyard barbecue or picnic, and easy substitutions make this simple recipe a winner every time.


Yin Yang Kale Salad

1 bunch kale, stalk removed
½ to 1 cup Firefly Yin Yang Carrots or Classic Kraut
⅓ cup dried apricots, thinly sliced
⅓ cup pumpkin seeds
¼ cup extra virgin olive oil
Juice of a lemon
Salt / Pepper to taste

- Slice the kale into uniform strips, and massage with olive oil and salt.
- Toss in the rest of the ingredients
- Finish with salt/pepper to taste.
— That’s it!
Feel free to substitute your favorite dried fruit or nuts. A little feta cheese is a nice addition to this recipe as well. Play around with what’s already in your fridge, and enjoy!
