Day 20 - Fermentation or Pickling - What’s the difference?
Though fermentation has recently become a buzz-word in food and health communities, there is still widespread confusion on the difference between fermentation and pickling. While both processes are utilized to preserve ingredients, there are big differences in these preservation methods and the resulting health benefits.
Long story short, pickled foods do not contain the beneficial lactic acid bacteria (probiotics) that are present in fermented foods.
