Five ways to use Cranberry Kraut!

Cranberry Kraut, cream cheese, dried cranberries, and candied ginger makes an excellent holiday spread, dip, or frosting (see recipe below). Cranberry Kraut is available at the Ballard Sunday Farmers Market and online.

Everyday Fruit Smoothie

1 cup frozen blueberries, strawberries, blackberries or mixed

1 banana

½ apple

1 cup coconut water, hemp milk, or almond milk

½ cup Cranberry Kraut

Place all ingredients in a blender and blend on high until smooth - pour into a frosty mug and enjoy.


Classic Cranberry Sauce/Relish

1 ⅓ cup Cranberry Kraut

1 cup fresh/frozen cranberries

1 tsp orange zest

4 T orange juice

3 T sugar

Place all ingredients in a food processor. Pulse until desired consistency is attained. Allow relish to cool in refrigerator so flavors can meld for about an hour.


Cranberry Horseradish Sauce

½ cup Cranberry Kraut

¼ cup prepared horseradish

Blend ingredients in a blender or food processor until smooth. Add salt to taste. 


Kale and Cranberry Kraut Salad

2 quarts kale, washed, deveined and sliced thinly

3 T olive oil

1-2  t sea salt

½ cup Cranberry Kraut, drained

½ cup dried cranberries, roughly chopped

½ cup red onion, thinly sliced

2 T Cranberry Kraut brine or apple cider vinegar

½ cup almonds, thinly sliced

Add the salt and olive oil to the kale in a large bowl, and massage with hands for several minutes. Chop the Kraut, and add it, the cranberries, and the red onion to the kale and toss well. Sprinkle salad with brine/vinegar and almonds to taste. Add cooked farro or other grain or feta or goat cheese.


Cranberry Kraut Spread/Dip/Frosting

8 ounces cream cheese, at room temperature

1 cup Cranberry Kraut, drained

2 T dried cranberries, finely chopped

1 T dried candied ginger, finely chopped

Place cream cheese and kraut in a food processor. Blend until smooth. Stir in cranberries and ginger. Optional: Try adding more of the dried goods and some chopped nuts.
